Nandu GRAVY (Crab Curry)
Ingredients:
- Oil – 1 cup
- Crab – 1 kg
- Onion – 4
- Tomato – 3
- Ginger-Garlic Paste – 1 spoon
- Chili Powder – 2 spoons
- Pepper Powder – 1 spoon
- Turmeric Powder – ½ spoon
- Water – 2 glasses
- Curry Leaves, Coriander Leaves – as required
Preparation Method:
1) Wash the crab (நண்டு) 3-4 times thoroughly .
2) Place a pan (கடாயை) on the stove (அடுப்பில்)
3)Add oil (எண்ணெய்) to it and fry the onion (வெங்காயம்) well (நன்றாக வதக்கவும்).
4) After the onion is fried, add the ginger-garlic paste (இஞ்சி பூண்டு) and fry until the raw smell is gone. Following that, add the tomatoes (தக்காளி) and fry until the oil separates.
5) After that, add the Crab, chili powder (மிளகாய்த்தூள்), turmeric powder (மஞ்சள் தூள்), and salt (உப்பு) and mix well (நன்றாக கிளறவும்). Then, add water (தண்ணீர்) and cover (மூடிவைக்கவும்) it for 10 minutes (நிமிடம்)
6) After the water reduces and the gravy thickens, add the pepper powder and mix well.
7) Finally, sprinkle curry leaves and coriander leaves and take it off the stove.

How to Clean Crab:
Cleaning crab is one of the trickiest parts of cooking it. Once you learn the method, it becomes very easy. You can use a small stone or the pestle from a mortar and pestle to break the shell gently.
